  2. Cook the chicken over medium high in medium size skillet. Dice after its cooked through.
  3. In separate skillet make the rice. I just bought Spanish rice in a box and followed the instructions. If you want to make your own homemade go right ahead. I'm tired at the end of the day and I make quick easy meals. Weekends when I'm not on over time I will make everything from scratch.
  4. For the Pico de Gallo

    3 onions (red or white)
    12 tomatoes
    2-3 jalapeño peppers
    2 cups (256 g) cilantro leaves
    1 lime
    Salt
    1 can corn,rinsed
  5. Dice the onion and tomato into small pieces, then, chop the cilantro.Cut 1 (or 2) peppers in half and remove the seeds with a spoon. If you want to add some bold spiciness to the dip, leave some of the white membranes in the jalapeño. Then, finely dice the peppers. Put the onion, tomato, cilantro, and peppers into a bowl. Put the 1 can of corn in the bowl. Mix the contents.Cut the lime in half. Squeeze the lime juice into the dip (only use one-half of the lime), then, add salt, and mix the dip.
  6. I warmed up black beans in a small skillet. I used taco sauce from the store. I bought guacamole already made.
  7. Spoon 2 decent size serving size spoonfuls in a bowl. Top with chicken, Pico de Gallo, beans, shredded cheese, lettuce if you want, guacamole or avocado slices, tomatoes, sour cream and taco sauce. I put pickled jalapenos, all kinds of stuff in my rice bowls.
  8. Enjoy.
